The villas are surrounded by an ancient olive grove of about five acres. The olive trees have been planted by the grandparents who lived on the estate over the centuries. The variety of this olive grove is “Aivaliotiki”. The 90% of the olive trees in the Karystos area belong to this variety.

The “Aivaliotiki” variety are large-fruited trees with good yield. The soil in which the olive trees  are planted has a slight downward slope and is stony. This soil is ideal for the growth of the olive tree because both with its slight slope the water drains and thus the roots of the trees do not rot, and with its stony texture it helps the roots of the trees to adhere strongly to it.

The olive fruit is harvested during the period October – November (sometimes every year and sometimes every two years – depends on the weather conditions). For the collection of the olive fruit, a special machine is used to collect the fruit, which is of very low disturbance to the tree (so the tree is not hurt during the collection of the fruit).

Nets are also used on which the fruit falls. After it is cleaned from the leaves that have fallen from the tree, it is then stored in sacks to be transported to the olive mill for the extraction of the olive oil. During the year the oil is stored in a shady and moisture-free place either in stainless steel or glass containers. The quality of the oil produced by these trees is very high.
